Instructions:

Make the Cheesecake Filling:

Beat together the cream cheese, powdered sugar, and vanilla extract in a medium bowl until smooth.
Gently fold in the mashed raspberries (or raspberry preserves) until fully combined.
Refrigerate the mixture for 30 minutes to firm up.

Form the Cheesecake Balls:

Scoop out about 1 tablespoon of the mixture and roll it into a ball.
Place the balls on a parchment-lined baking sheet.
Freeze the balls for 1 hour to ensure they firm up.

Prepare the White Chocolate Coating:

In a microwave-safe bowl, melt the white chocolate chips with coconut oil (if using) in 20-second intervals, stirring after each, until completely smooth.
