    • 1/2 teaspoon ground ginger
    • 1/2 teaspoon minced garlic
    • 2 tablespoons cornstarch + 2 tablespoons water (for thickening)
  • For the Casserole:

    • 1 pound boneless, skinless chicken breasts

Instructions:

Step 1: Prepare the Oven and Baking Dish

  1. Preheat your oven to 350°F (175°C).
  2. Spray a 9x13-inch baking pan with non-stick spray to prevent sticking.

Step 2: Make the Teriyaki Sauce

  1. In a small saucepan, combine soy sauce, 1/2 cup water, brown sugar, ground ginger, and minced garlic.
  2. Cover and bring the mixture to a boil over medium heat.
  3. In a separate bowl, whisk together the cornstarch and 2 tablespoons of water until smooth.
  4. Once the sauce is boiling, add the cornstarch mixture while stirring constantly.
  5. Cook until the sauce thickens, then remove from heat and set aside.

Step 3: Assemble the Casserole

  1. Place the chicken breasts in the prepared baking pan.
  2. Arrange the stir-fry vegetables around the chicken.
  3. Pour 1 cup of the prepared teriyaki sauce over the chicken and vegetables.
  4. Cover the pan tightly with foil and bake for 30 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).

Step 4: Shred the Chicken and Add Rice

  1. Remove the pan from the oven and carefully take off the foil.
  2. Use two forks to shred the chicken directly in the pan.
  3. Add the cooked rice and most of the remaining teriyaki sauce to the dish.
  4. Gently toss everything together until evenly combined.

Step 5: Final Bake

  1. Return the casserole to the oven and bake for an additional 10 minutes, or until heated through.
  2. Remove from the oven and let it stand for 5 minutes before serving.

Step 6: Serve and Enjoy
